JS Natural Cocoa Powder
ZERO

Natural, non-alkalised cocoa powder with exceptional colouring strength.

JS Natural Cocoa Powder – ZERO™ is our non-alkalised (natural) cocoa powder, produced from upcycled cocoa beans using JS Cocoa’s direct expelling process. With a fat content of just 0–2%, ZERO™ contains virtually no cocoa butter — meaning the product consists almost entirely of fat-free cocoa solids.

The result is a cocoa powder with exceptional colouring strength per kilogram. Because less fat means more colour-active dry solids, manufacturers can achieve the desired colour intensity with a lower dosage compared to standard 10–12% fat powders — reducing cost-in-use by up to 30%. ZERO™ also disperses exceptionally well in water and is fully compatible with both lauric and non-lauric fat systems.

NERO

Our standard dark alkalized cocoa powder — smooth, dark and dependable.

JS Alkalized Cocoa Powder – NERO™ is our standard dark alkalized cocoa powder, launched in 2019. Like all JS Cocoa powders, NERO™ contains just 0–2% fat — significantly below the industry standard — which translates directly into stronger colouring power per kilogram and a lower cost-in-use for manufacturers.

NERO™ is produced through alkalisation (dutching), which deepens the colour and reduces natural acidity, resulting in a smooth, dark profile well-suited for a wide range of food applications. Its low fat content ensures compatibility with both lauric and non-lauric fat systems, eliminating the risk of fat bloom or incompatibility.

JS Alkalized Cocoa Powder
UMBRA

Dark colour with a clean label — declared simply as ‘cocoa powder’ in the EU.

JS Alkalized Cocoa Powder – UMBRA™ is our alkalized dark cocoa powder, formulated with less than 7% alkalising agent. Under EU food labelling regulations (Directive 2000/36/EC), a cocoa powder processed with less than 7% alkalising agent by weight of dry solids may be declared on the ingredient list simply as ‘cocoa powder’ — without the qualifier ‘processed with alkali’.

This makes UMBRA™ a strategic choice for manufacturers who want a darker colour profile than natural powder, while keeping their ingredient declaration clean and simple. UMBRA™ is slightly lighter in colour than NERO™, but significantly darker than ZERO™ — offering a distinct middle ground in the JS Cocoa powder portfolio.

JS Dark Alkalized Cocoa Powder – BLACK TORRO™ is our most intensely coloured cocoa powder, designed for applications where maximum colour depth is the primary objective. Launched as part of JS Cocoa’s expanding specialty powder portfolio, BLACK TORRO™ delivers a deep, near-black colour profile that makes it the preferred choice for premium dark chocolate products, luxury bakery lines and visually distinctive confectionery.

Like all JS Cocoa powders, BLACK TORRO™ contains just 0–2% fat. This ultra-low fat content means the powder consists predominantly of colour-active cocoa solids — delivering outstanding colour intensity per kilogram and reducing the required dosage compared to standard-fat powders.
